The problem was discovered on June 19, 2018, by the Food Safety and Inspection Service (FSIS) during routine inspection activities. The product was tested by the establishment and found to be positive for STEC O103 under their sampling program. The items were shipped to a retailer who sold the product at a farmers market in Roger, Texas. FSIS is concerned that some product may be frozen in consumers' freezers.

People can become ill from STECs 28 days (average of 34 days) after consuming the organism. Most people infected with STEC O103 develop diarrhea (often bloody) and vomiting. Some illnesses last longer and can be more severe, rarely leading to hemolytic uremic syndrome (HUS), a type of kidney failure. Consumers who have purchased these products are urged not to consume them. These products should be thrown away or returned to the place of purchase. FSIS advises all consumers to safely prepare their raw meat products and only consume ground beef that has been cooked to a temperature of 160°F.
